I used to think monterey jack was not the best cheese but now I think it is the best or maybe #2 or #3 because there's some other good cheeses too

colby jack is really only suitable for making beer cheese sauce, in which case it is on equal footing with monterey. in any other case the colby simply detracts from the supreme flavor and texture of the jack. OK MAYBE it works better in a cold cut type situation but even here, jack is meant to be a melted cheese and you'd be much better off with say a havarti or swiss

I love pepper jack. It's basically just jack but with a tiny bit of peppers, pepper jack is great for all the reasons regular jack is great. The pepper jack gets too much credit it doesn't deserve just for adding the stupid peppers, normal jack is just as good

I like to take mushrooms, remove the stems and fill the caps with pepper jack, cover it with sausage so the cheese is sealed in, put breadcrumbs over the sausage and olive oil on the mushroom and grill them until the sausage cooks and cheese melts

Ahhh gotcha, yeah I hate buttons. But I'm spoiled cause we have wild mushrooms pretty accessible here. I bet your things still taste pretty good though since buttons are completely tasteless and then they have cheese and sausage
