Recipe wants me to mix 2 tbs of dark soy sauce and 2 tbs of light soy sauce...but isnt light soy sauce just more diluted dark soy sauce? Do I need to purchase 2 separate fuking soy sauces or can I just water down dark soy sauce and use it instead?

yeah nah, they're not similar. light soy sauce is watery but strong and salty; dark soy sauce is thicker and full of flavour but not very salty at all. dark soy sauce adds some dark dimensions of flavour to a dish but primarily it's used for colour, while light soy sauce provides the soy sossy punch we all know and love. they're not the same and bing bongs shouldn't have named them both soy sauce.

you honestly can, although dark soy does have a very earthy glutamate flavour which adds something. but you are using very little of it and I find its own flavour gets mostly overpowered by everything else

You can't. Light soy sauce isn't available outside of Japan.

You really can't get the same flavor/color profile unless you combine them.

Can't think of anything that I would want this much dark soy in. Most recipes use a teaspoon at most, unless you're cooking up some giant dish for 20 people.
