Happy Cinco de Mayo. I'm currently taking a huge beer and pizza shit, but after that I'll put a load of laundry in, and after THAT I'll be getting starting on a chile colorado / ropa vieja type thing with a chuck roast, bell pepper, onion, tomato, and chipotle powder (and some beer of course.) Oven at 350 for 2-3 hours or until tender, shred, mix with sauce, enjoy.

Hispanic here. If you really want to celebrate (I don't), then at least try to make somewhat authentic street tacos with corn tortillas and a thin steak fried in butter/lard. All of the toppings are completely optional IMHO. Ultimately these are just healthier versions of sandwiches.

Taco meatloaf is in the oven, flour tortillas are ready for meatloaf, "traditional taco fixings" like lettuce tomato and onion, beans have been mashed and pressed through the sieve and about to be refried and beer, jarritos and homemade hibiscus/jamaica soda is chilled.
What should I do with the meatloaf's rendered fat? I was thinking a tomato-juice-based gravy as a burrito dipping sauce. And I just realized I forgot to cook the rice so I'm gonna do that right now.

Nor would I, Paco. I'm from one of those countries where people live so long that they basically just forget to die. I don't eat much bacon or burgers. Last time I had a burger was last week. Time before that must've been last summer. And each time, is one, single, 100g raw weight burger. Last time I had bacon was November and before that, the November prior.
I eat mostly vegetables, some grain and some dairy (it's good being white), some fish and poultry and very little red meat so don't preach at me about burgers and bacon and animal fat until you get your house in order. Last I looked into it, Mexico is an even fatter population than America and looking it to now, it seems to still be the case. Also, if we take out the rampant murder rate, the life expectancy is still considerably lower than America (by six years lol) and far lower than mine (by 13 lmao).
Keep avoiding those carbs, tho. : )
We just ate our joke food and I'm in the garage getting a second case of beer from the fridge (and phoneposting here). Back to it!

One of the Americanized abominations I've made for Cinco in the past is a tamal casserole. Basically a cottage/shepherd's pie but with homemade tamal dough on top instead of mash and the filling is made with Old El Paso or whatever taco seasoning. Pretty good.
