CalArts is and incestuous style and low effort, and low production quality, and limited in function and scope, and the people who promulgate it demand you think they're the best ever.
Anime is cheaply made, but CalArts is cheap. I say this as someone who actually enjoys some shows labelled CalArts, and have seen more cartoons than anime. Some things one cannot deny.

The biggest issue for Genshin is it's the EXACT same body type for literally every character.
There's 3 types for females and 2 for males: loli, hebe, and adult for the girls; twink and skinny armed tall man for the boys.
The fucking Oni shares the same body type as Diluc when his splash art showed him as having these massive muscles, yet his ingame model makes him look like a skinny tall dude with flat abs.

If you are doing realistic/semi-realistic anatomy, you only go so far in modifications.

But yes, I agree that if your character can be distinguished based on silhouette alone, then it is a great design

I think it's just because the 'anime style' just has a longer lasting, broader appeal. To say there isn't a similarity for a lot of manga/anime art I think is cope, but that said, I can't think of a single anime that has worse art than say... 'Steven Universe'.
The 'anime' style is just objectively better than the 'calarts' style, even if you do happened to subjectively like the calarts style.
